So it is no secret... I LOVE Cracker Barrel, but sadly, there is not one in California.
So when I go South to visit family, I always want to go and have one of their famous dishes, Hash brown Casserole.
I talked to my sister Tai this weekend, who lives in Houston where there have a few Cracker Barrel, and when she told me she was going there with some friends, it inspired me to make this dish and it was easy to do for me and for the kids.
I found a recipe online that I thought was pretty good and off I went....

Here is the recipe that I used:
2 lbs frozen hash browns
1/2 cup margarine or 1/2 cup butter, melted
1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream
1/2 cup onion, peeled and chopped
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper
Directions:
1: Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
1/2 cup margarine or 1/2 cup butter, melted
1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream
1/2 cup onion, peeled and chopped
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper
Directions:
1: Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
2: Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.
I saved a little cheese from the mixing and added it on the top for that cheesy look. Everyone loved it and I'm sure it will be made again.
